I love a good muffin recipe – one that is simple, full of nutrition and takes only minutes to prepare and bake. When I find one of these, it instantly goes into high rotation in our house! These Easy Banana & Carrot muffins have just 6 ingredients that you likely already have on hand, and are a sneaky serve of veggies for discerning toddlers! Enjoy!
Ingredients
- makes 1 dozen muffins
- 1 cup self-raising flour
- 1 mashed banana
- 1 egg
- ⅓ cup milk
- 2 tablespoons honey
- 1 grated carrot
Steps
- Preheat your oven to 180ºc, and line your muffin tray. I used a patty pan tray as I wanted mine bite sized, but this recipe will work with both patty pan and regular muffin trays.
- In a bowl, combine flour, banana, egg, milk, honey and carrot, and stir everything until combined. This is a great one to get the kids to help with as it’s all very simple!
- Spoon into patty cases and bake 15-20 minutes until golden (reduce to 10 minutes if using patty pan tray)
- Can be frozen, but ours never usually last that long!
